Sea moss is a common name used for more than one red seaweed. This is the whole seaweed, cleaned and dried, before any soaking or blending.
What's in it
Gel-forming carbohydrates give soaked sea moss its texture. Seaweed may contain iodine and other minerals; amounts depend on species, growing conditions and processing.
Iodine
The mineral the thyroid draws on. Concentration varies considerably by harvest.
Carrageenan
The long-chain polysaccharide that gives the gel its body.
Potassium and magnesium
Drawn from seawater.
How it works
Gel at home: Soaked sea moss swells and softens, and its natural carbohydrates bind water. Blended with fresh water, it sets into a smooth gel in the fridge. Coastal-food variety: It brings a traditional sea-vegetable ingredient to drinks and food routines.

In Jamaica, sea moss is boiled and blended with milk, nutmeg and cinnamon into a thick drink often called Irish moss.
- 1Rinse 25–30g in cool water two or three times to remove sand and salt, then soak in fresh water in the fridge for 12–24 hours.
- 2Drain, rinse, and blend with roughly the same volume of fresh water until smooth. Refrigerate in a clean jar; it sets within a few hours.
- 3Keep the gel in the fridge and use within 2 weeks. High in iodine — do not exceed without advice if you have a thyroid condition.
Storage: Store sealed in a cool, dry place away from sunlight. Once made into gel, keep refrigerated and use within 2 weeks.
