The plant

Dill produces feathery leaves and umbrella-shaped flower heads. Its dried fruits are commonly called seeds.

What's in it

Carvone and limonene are fragrant compounds in the seed’s oil. They contribute to its warm, fresh aroma.

Carvone

The dominant volatile, shared with caraway.

Limonene

The citrus lift, around forty per cent of the oil.

Dillapiole

A phenylpropanoid largely specific to dill.

Fixed oils

Roughly twenty per cent of the seed by weight.

How it works

After-meal ease: Dill seed has a traditional place in preparations for wind and a full-feeling stomach. Aromatic release: Crushing the seeds helps release their fragrant oils into an infusion. Herbalists call this a carminative tradition—using aromatic herbs for wind-related discomfort.

In the tradition

Used in European and South Asian kitchen and herbal traditions.

The leaf and seed come from the same plant but have different flavours.
