The plant

Green cardamom is a tropical member of the ginger family. Its small pods protect clusters of aromatic seeds.

What's in it

Cineole and terpinyl acetate are natural scent compounds in the seeds. Aromatic oils are the oils that carry a plant’s smell and flavour.

Cineole

The eucalyptus note, up to forty per cent of the oil.

Alpha-terpinyl acetate

The sweet floral component. What separates cardamom from eucalyptus.

Limonene

The citrus lift.

Linalool

A softer floral note underneath.

How it works

Digestive tradition: Cardamom is traditionally enjoyed after meals for a comfortable, settled feeling. Freshness: Chewing or infusing the aromatic seeds releases their fragrant oils into the mouth. Their warm, sweet character makes them a popular partner for other herbs in digestive blends.

In the tradition

Used in South Asian food and Ayurveda, and in Middle Eastern coffee traditions.

Opening the pod releases the fragrance stored in its tiny seeds.
