What's in it
Galactomannans are water-loving fibres that can thicken a mixture. The seeds also contain characteristic aromatic compounds.
Sotolon
The maple compound. Detectable by the human nose at extraordinarily low concentrations.
Galactomannan
A soluble fibre, around a quarter of the seed.
4-hydroxyisoleucine
An unusual amino acid, largely specific to fenugreek.
Diosgenin
A steroidal saponin, used industrially as a precursor.
How it works
Food texture: The seed’s water-loving fibre helps give preparations body and thickness. Digestive heritage: Fenugreek is traditionally used in food and digestive routines, with a warming bitter taste that complements other spices.

South Asian, Middle Eastern and North African food traditions.
Its strong scent is often compared with maple syrup.
- 1Stir ½–1 tsp fenugreek powder into water or food, or steep in 250ml hot water for 10 mins.
- 2Take 1–2 times daily.
- 3Bitter with a distinct maple note.
Storage: Store in an airtight container in a cool, dry place away from sunlight. Best used within 12–24 months.
- Avoid medicinal amounts during pregnancy; check diabetes medicines, breastfeeding and legume allergies.
- On diabetes or blood-thinning medication: may interact.
- Oestrogen-sensitive conditions: contains phytoestrogens.
