The plant

Sage is a small shrub with soft grey-green leaves and violet flowers.

What's in it

Tannins give a lightly drying feel. Aromatic oils provide the scent; rosmarinic acid is another natural compound in the leaf.

Thujone

Both alpha and beta forms. The reason for the cautions.

Camphor

Contributing the sharp cooling top note.

Cineole

The eucalyptus note, shared with bay and rosemary.

Rosmarinic acid

Abundant, and the reason sage is used as a food preservative.

How it works

Mouth and throat tradition: Suitable sage preparations have traditionally been used as gargles for minor mouth and throat discomfort. Digestive role: Sage also has a traditional place in after-meal preparations. Its astringent character means a lightly tightening or drying quality associated with tannins.

In the tradition

A longstanding Mediterranean and European food and herbal ingredient.

Its leaves have a soft, textured surface and strong aroma.
