The plant

Parsley is a leafy member of the carrot family. The leaf is used in cooking and traditional infusions.

What's in it

Chlorophyll is its green pigment. Flavonoids are natural plant compounds, and small amounts of aromatic oils contribute to the scent.

Vitamin K1

Present in high concentration — parsley is one of the richest leafy sources.

Apiol

A phenylpropanoid in the volatile oil. The reason for the cautions below.

Myristicin

Also present in nutmeg. Shares the same caution.

Apigenin

A flavonoid, abundant in the leaf.

How it works

Food freshness: Parsley adds a bright green flavour to meals. Urinary tradition: The leaf has traditionally been used in preparations intended to encourage urine flow. This means the passage of water through the kidneys, bladder and connecting tubes.

Used widely in Mediterranean cooking and herbal practice.

The leafy kitchen herb and its concentrated seed oil have very different strengths.

How to use
  1. 1Steep 1–2 tsp dried parsley leaf in 250ml hot water for 5–10 mins.
  2. 2Drink 1–2 cups daily.
  3. 3Fresh, bright, slightly grassy flavour — more pleasant than fresh parsley tea.
  4. 4Pairs well with nettle or dandelion leaf for kidney and iron-building blends.

Storage: Store in an airtight container in a cool, dry place away from direct sunlight. Best used within 12–18 months.

Suitability
  • Keep pregnancy use to normal food amounts.
  • Check kidney problems, fluid restrictions, breastfeeding and medicines.
  • On warfarin: high vitamin K; check with your doctor.
  • On diuretics: may enhance effects.
