The plant

Laminaria digitata is a large brown seaweed with finger-like fronds growing in cool seas.

What's in it

Iodine is a mineral used by the thyroid gland. Alginates are gel-forming carbohydrates that help give brown seaweed its texture.

Iodine

Highly concentrated — kelp accumulates it thousands of times above seawater levels.

Alginates

Structural polysaccharides. Widely used commercially as thickeners.

Fucoidan

A sulphated polysaccharide characteristic of brown algae.

Minerals

Potassium, magnesium, calcium and iron.

How it works

Thyroid nutrition: The thyroid is a small gland in the neck. It uses iodine to make hormones that help regulate how the body uses energy. Sea-vegetable variety: Kelp contributes a distinctive marine ingredient to food traditions. The amount of iodine in the product determines how it fits into a diet.

In the tradition

Used in coastal food traditions and modern sea-vegetable supplements.

Its divided fronds give Laminaria digitata its finger-like appearance.

How to use
  1. 1Use ¼–½ tsp dried kelp daily, stirred into soups, broths or sprinkled over food.
  2. 2Do not exceed this without advice — kelp is very high in iodine and excess affects thyroid function.
  3. 3Salty and savoury.
Suitability
  • Iodine can be excessive.
  • Check thyroid disease, thyroid medicines, pregnancy and breastfeeding; follow tested serving guidance.

A food supplement, not a substitute for a varied diet. Speak to your doctor before use if you are pregnant, breastfeeding or taking medication.
