Foeniculum vulgare
Select sizeThe plant

What's in it
Anethole gives much of the sweet anise-like aroma. Fenchone is another natural oil component contributing to the flavour.
Anethole
The sweet aniseed note. Up to eighty per cent of the volatile oil.
Fenchone
Camphor-like and slightly bitter. What separates fennel from anise.
Estragole
A minor aromatic, also present in tarragon.
Limonene

How it works
Wind and fullness: Fennel is traditionally used to ease bloating and mild digestive cramping. Cramping is uncomfortable tightening in the muscles around the gut. After-meal ritual: Its aromatic oils are released when seeds are lightly crushed, making a sweet, warming infusion popular after food.
