The plant

Elderberries are the dark ripe fruits of Sambucus nigra. They are cooked before eating or making drinks.

Anthocyanins are the natural pigments responsible for their deep purple colour. They are part of the wider family of polyphenols found in plant foods.

Anthocyanins

Cyanidin glycosides. The pigment behind the deep purple.

Cyanogenic glycosides

Sambunigrin, present in raw berry, leaf and stem. Destroyed by cooking.

Vitamin C

Present in the fresh berry in useful amounts.

Flavonols

Including quercetin and rutin.

How it works

Seasonal comfort: Cooked elderberry has a long tradition in warming drinks during the colder months. Plant colour: The berry’s purple pigments contribute to its distinctive composition and food appeal. Enjoyed in a warm drink, it brings flavour, fluid and a familiar seasonal ritual.

In the tradition

Widely used in European syrups and now prominent in holistic seasonal blends.
